Hi! I’m Allison and welcome to Lighten Up, where I get to share my latest ‘lightened up’ recipes that are always fast, fresh, and easy to make. Here, you’ll find many of my own creations as well as recipes that I’ve lightened up from my favorite food blogs, cookbooks, and family recipes. My goal is to prove that healthy cooking can be quick, easy, and (of course) delicious!
I’m a newlywed with a full-time job, a hungry husband to feed, and a passion for healthy living and cooking. I am a 100% self-taught home cook who has taken a few cooking classes for fun…and I’m constantly learning! My mom taught me how to cook at a young age — I have memories of my five-year-old-self rolling up spinach lasagna rolls and eating shredded mozzarella straight out of the food processor. Since then, I’ve spent a lot of time looking through cookbooks, making recipes from Pinterest (I’m a self-proclaimed addict), and watching the Food Network for recipe inspiration. My cooking strategy is to substitute the not-so-healthy ingredients in any recipe — creating guilt-free, delicious dishes to enjoy for any meal or occasion!
