It may still be cold outside, but spring is just around the corner…I can almost feel it! As the warm weather starts to approach and I have the urge to go swimsuit shopping, I know it’s time to kick-start the diet a bit. It’s a well-known fact that the hubby and I MUST have some kind of dessert in the house at all times, just in case a sugar craving hits. The swimsuit diet threatens to complicate my dessert plans…until I found these little bites of happiness! I used peanuts, which are the perfect complement to the sweet, chocolately crunch of these protein bites. These are just the ticket to kick that sugar craving to the curb. Made entirely of four simple ingredients — the energy bites have no added sugar, plus they’re full of protein to fill you up and only take 10 minutes to prepare! They taste like a chocolate-peanut butter brownie bite, are perfectly portioned, and are transportable (perfect for my daily 3pm work slump).
Chocolate Peanut Protein Bites
Yield: 20|Serving size: 1 energy bite
Calories: 107|Carbs: 12g|Fat: 6g|Protein: 4g|Sodium: 2g|Sugar: 7g
1 cup pitted dates
1 cup unsalted dry roasted peanuts (or substitute nut of your choice)
1/4 cup unsweetened cocoa powder
2 tsp vanilla extract
Place dates in a medium bowl and fill with warm water. Soak dates for 5 minutes to soften.
Drain the dates and pat dry on a paper towel.
Add all ingredients to the bowl of a food processor and pulse until mixture is very finely chopped.
Remove food processor blade and using a small cookie dough scoop or tablespoon, press mixture into the palm of your hand, pressing your other hand on top to flatten the mixture. This should create the stickiness needed to roll the mixture in the palm of your hand to form balls.
Continue this process until the date/peanut mixture is used up.
Store the energy bites in a sealed container in the refrigerator.
